You’ve been making banana bread all wrong!
But so was I. The banana bread I used to make had about two bananas in it and loads of sugar and oil. But I just found the most amazing recipe that – get this – has LOTS of bananas in it!
I mean, shouldn’t banana bread have lots of bananas and actually taste like a banana?
Anyway, I love this recipe because it only requires seven ingredients and about 10 minutes (plus 60 minutes to bake) of your time. That totally fits into my schedule, even with a newborn baby!
So here it is, the recipe you’ve been longing for and didn’t even know it!
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed, very ripe bananas
Preheat your oven to 350 degrees. Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine the flour, baking soda and salt. In a separate bowl, cream together the butter and brown sugar. Stir in the eggs and mashed bananas until well blended. Stir the banana mixture into the flour mixture, stir just until moistened. Pour batter into the prepared loaf pan.
Bake for 60 to 65 minutes or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for ten minutes, then turn out onto a wire rack.
I really like butter on my banana bread, but I tried this with coconut oil on top and it was divine! Almost like a pina colada!
